There's something about going home from Sunday services, putting on a cute apron with my dress and pearls and cooking Sunday lunch. It makes me feel all Martha Stuart-y inside! Here is one of my favorite Sunday lunch recipes courtesy of my good friend Jennifer Reynolds. She gave me a cookbook that she printed out that is comprised of her favorite recipes. It is one of my most treasured gifts! Homemade recipe books are wonderful, thoughtful gifts. I'm planning on doing a day of "elegant gifts" in the near future, so stay tuned! Here is the recipe- you definitely need to try this one because it's super easy, delish, and can be put together Saturday night and put in the oven Sunday morning on time bake.
Easy Tomato Baked Chicken
1 small red onion
4 small boneless, skinless chicken breast halves
1 can diced tomatoes, drained
1/4 c. balsamic vinaigrette dressing
1/4 tsp. garlic powder
1/4 c. grated parmesan cheese
Preheat oven to 425 degrees. Slice onions and place in the bottom of a 9 x 13 baking dish; top with chicken. Combine tomatoes, dressing and garlic powder; pour over chicken. Sprinkle with cheese. Bake 30 minutes or until chicken is cooked through. Let me know what your favorite Sunday recipe is!
That sounds wonderful! I will definitely have to try that. One of my favorite Sunday lunches is Pasta Fagiloli soup. So quick to put together and very yummy.
